| INGREDIENTS: | ||
| 2 to 3 bunches fresh spinach | 2 t onion, grated | 1 t salt |
| 1/2 t pepper, freshly ground | 2 T prepared mustard | 2 T wine vinegar |
| 8 T oil | 1/4 t lemon juice | fresh mushrooms |
| 1 | Combine onion, salt, pepper, mustard, vinegar, oil, and lemon juice in a large screw top jar. Cover. Shake thoroughly. Add mushrooms. Refrigerate until ready to use. Toss with spinach. |
