Pineapple Nut Bread

INGREDIENTS:
2 cups flour 1/2 cup sugar 1 t baking powder
1/2 t salt 1 cup raisins or dates chopped 1/2 cup macadamia nuts, chopped
1 egg beaten 1 t vanilla 2 T shortening, melted
1 cup pineapple, crushed and not drained 1 t baking soda



1 Sift together flour, sugar, baking powder, and salt. Add raisins and nuts. Combine egg vanilla, and shortening. Add to flour mixture. Dissolve soda in pineapple. Stir until blended. Pour into greased loaf pan. Bake at 350 for 1 hour or until done. Remove from oven. Leave in pan 5 minutes. Remove. Cool on rack.
