Goat Cheese and Bacon Mashed Potatoes

INGREDIENTS:
3 lbs russet potatoes, peeled and halved 2 Tbsps sweet butter salt to taste
1 tsp white pepper 1-1/2 cups heavy cream 6 oz fresh goat cheese, room temperature
1/4 lb bacon, cooked crisp and crumbled 1/2 cup scallions, chopped



1 Boil the potatoes in salted water until cooked through. Drain well. Place the potatoes in a large mixing bowl and mash thoroughly with an electric mixer. Beat in the butter, salt and white pepper. Add the heavy cream until smooth. Using a rubber spatula, stir in goat cheese, bacon and scallions. Serve immediately.
