| INGREDIENTS: | ||
| 6 tomatoes, peeled and cut up | 2 cups beef stock | 3 T lemon juice |
| 2 T oil | 1/2 cup onion, minced | 2 avocados, cut up |
| 1 pint sour cream | ||
| 1 | Blend tomatoes and broth in blender. Add lemon juice, oil, and onion. Blend well. Stir in diced avocado. Chill several hours. When ready to serve, add a dollop of sour cream to each serving. |
