Gazpacho Soup with Avocado

INGREDIENTS:
6 tomatoes, peeled and cut up 2 cups beef stock 3 T lemon juice
2 T oil 1/2 cup onion, minced 2 avocados, cut up
1 pint sour cream



1 Blend tomatoes and broth in blender. Add lemon juice, oil, and onion. Blend well. Stir in diced avocado. Chill several hours. When ready to serve, add a dollop of sour cream to each serving.
