| INGREDIENTS: | ||
| 6 cups whole wheat flour | 3 cups bread flour | 1/3 cup dark brown sugar |
| 2 tsps salt | 2 tsps baking soda | 2 large eggs, room temperature |
| 2-1/4 cups buttermilk, room temperature | 1/2 lb unsalted butter, cut into small pieces | |
| 1 | Mix all the dry ingredients thoroughly. Using your finegertips, rub the butter pieces into the flour mixture until it has a coarse and sandy texture. Combine the eggs with the buttermilk. Add the liquid to the dry ingredients and mix well. |
| 2 | Divide the dough into three even pieces and form each into a roll about 16" long. Lay the loaves on a lightly floured baking sheet and make several diagonal slashes in the top of each one. Sprinkle generously with white flour and bake immediately at 425 F. for about 50 minutes. |
