| SEASONING MIX: 1-1/8 teaspoons salt | 3/4 teaspoon sweet paprika | 1/2 teaspoon white pepper |

| 1/4 teaspoon black pepper | 1/4 teaspoon dried thyme leaves | 1 cup peeled and coarsely chopped raw eggplant or zucchini, or 1 cup peeled and coarsely chopped cooked mirliton |

| 1 | Combine the seasoning mix ingredients in a small bowl, mixing thoroughly. Sprinkle the vegetables evenly with about 1/2 teaspoon of the mix. Place the flour in a small bowl and the bread crumbs in another. Add 1 teaspoon of the seasoning mix to the flour and 1 teaspoon to the bread crumbs, mixing each well. (Use any leftover seasoning mix to season other vegetables before cooking.) In a separate small bowl combine the milk and egg until well blended. |
