Leopold's Deviled Eggs

INGREDIENTS:
10 large hard-boiled eggs, peeled, halved lengthwise 1/2 cup (about) chopped fresh chives 1/4 cup mayonnaise
1 teaspoon Dijon mustard



1 Scoop yolks out of eggs; place in medium bowl. Mash with back of fork. Mix in 2 tablespoons chives, mayonnaise, and mustard. Season filling with salt and pepper. Mound filling in egg halves, dividing equally. Sprinkle with remaining chives. Arrange eggs on platter.
