Bruschetta-Grilled Italian Bread

INGREDIENTS:
1 tsp garlic, chopped 1 cup olive oil 8 ripe Roma Tomatoes, diced
20 fresh basil leaves, julienne 1 tsp oregano salt and pepper to taste
1 garlic bulb 12 slices thick crusty Italian bread black olives



1 In a mixing bowl, combine the chopped garlic, 1/2 cup olive oil, tomatoes, basil and oregano. Salt and pepper to taste. Let mixture stand for 30 minutes at room temperature.
2 Cut garlic bulb in half and rub each slice of bread on both sides. Brush lightly with remaining olive oil.
3 Toast in oven under broiler, turning slices when golden brown. Finsih other side the same way.
4 Place bread slices on a large platter and top with tomato mixture evenly. Garnish with olive and serve.
