| INGREDIENTS: | ||
| 1 tsp garlic, chopped | 1 cup olive oil | 8 ripe Roma Tomatoes, diced |
| 20 fresh basil leaves, julienne | 1 tsp oregano | salt and pepper to taste |
| 1 garlic bulb | 12 slices thick crusty Italian bread | black olives |
| 1 | In a mixing bowl, combine the chopped garlic, 1/2 cup olive oil, tomatoes, basil and oregano. Salt and pepper to taste. Let mixture stand for 30 minutes at room temperature. |
| 2 | Cut garlic bulb in half and rub each slice of bread on both sides. Brush lightly with remaining olive oil. |
| 3 | Toast in oven under broiler, turning slices when golden brown. Finsih other side the same way. |
| 4 | Place bread slices on a large platter and top with tomato mixture evenly. Garnish with olive and serve. |
