Baby Lettuce Salad with Baked Goat Cheese Herb Dressing

INGREDIENTS:
1 lb goat cheese 1 cup bread crumbs 1 cup olive oil
1/4 cup balsamic vinegar 1/2 Tbsp marjoram, chopped 1/2 Tbsp sage, chopped
8 cups baby lettuce, mixed variety 1 red pepper, roasted, julienne 1 yellow pepper, roasted, julienne
croutons



1 Roll the goat cheese in bread crumbs. Bake for 10 minutes in 350 oven.
2 Meanwhile, prepare the herb dressing by combining the olive oil, balsamic vinegar and herbs.
3 Toss lettuce with the herb dressing. Place the warm goat cheese on top of the lettuce. Garnish with strips of red and yellow peppers and croutons.
