Black Beans

INGREDIENTS:
1 pound dried black beans 4 cups water 1 (1/4-pound) slab of bacon or 5 slices bacon
2 green onions, chopped 1 tablespoon chopped fresh cilantro or parsley 1 teaspoon salt
1/2 teaspoon pepper sour cream (optional)



1 Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain.
2 Combine beans, 4 cups water, bacon, green onions, cilantro, salt, and pepper; bring mixture to a boil. Cover, reduce heat, and simmer 3 hours or until beans are tender. Uncover and simmer 30 to 45 minutes or until liquid is reduced. (Bean mixture should be slightly soupy.) Remove and discard bacon before serving. Ladle into bowls, and, if desired, garnish each serving with a dollop of sour cream.
