| INGREDIENTS: | ||
| 2 pounds unpeeled large fresh shrimp | 1/2 cup butter or margarine, melted | 1/2 cup olive oil |
| 1/4 cup chopped fresh parsley | 1 tablespoon chopped green onions | 3 cloves garlic, minced |
| 1 tablespoon plus 1-1/2 teaspoons fresh lemon juice | freshly ground pepper | hot cooked rice |
| 1 | Peel and devein shrimp. Set aside. |
| 2 | Combine butter and next 5 ingredients in a large shallow dish. Add shrimp, tossing to coat well. Cover and marinate in refrigerator at least 30 minutes, stirring occasionally. |
| 3 | Arrange shrimp in a single layer in a large, shallow baking dish; brush marinade over shrimp. Broil shrimp 4 inches from heat 3 minutes. Turn shrimp, and broil an additional 3 minutes or until shrimp turn pink. Sprinkle with pepper. Serve with pan drippings over hot cooked rice. |
