Baked Beans

INGREDIENTS:
1 pound dried navy beans 1/2 cup chopped salt pork or bacon 3-1/2 cups water
1 cup vegetable juice cocktail 1/2 cup molasses 1/4 cup plus 2 tablespoons firmly packed brown sugar
1/4 cup chopped onion 2 teaspoons salt 2 teaspoons dry mustard
1/4 teaspoon pepper



1 Sort and wash beans; place in a large Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain.
2 Saute salt pork in a skillet until lightly browned; drain. Add salt pork, 3-1/2 cups water, and remaining ingredients to beans; stir well. Cover and bake at 350 F for 5 to 6 hours, adding additional water, if necessary.
