Mocha-Amaretto Mousse

INGREDIENTS:
1 (6-ounce) package semisweet chocolate morsels 3 tablespoons apricot nectar 2 tablespoons amaretto
2 eggs 2 egg yolks 1 tablespoon plus 1-1/2 teaspoons instant coffee granules
1/4 cup sugar 3/4 teaspoon almond extract 1/2 teaspoon vanilla extract
2 cups whipping cream, divided 2 tablespoons powdered sugar 1/8 teaspoon amaretto
1/8 teaspoon almond extract chocolate curls



1 Combine chocolate morsels, apricot nectar, and 2 tablespoons amaretto in top of a double boiler; bring water to a boil. Reduce heat to low; cool until chocolate melts. Let cool.
2 Combine eggs and next 5 ingredients in container of an electric blender. Add 1 cup whipping cream; cover and process until well blended. Add chocolate mixture, and blend until smooth. Pour mixture into individual serving dishes; chill until set.
3 Beat remaining 1 cup whipping cream until foamy; gradually add powdered sugar, 1/8 teaspoon amaretto, and 1/8 teaspoon almond extract, beating until soft peaks form. Top each serving with sweetened whipped cream and chocolate curls.
