INGREDIENTS:
4 cups fresh-squeezed Seville orange juice fresh-squeezed juice of 4 limes 2 cups olive oil
12 cloves garlic, crushed 8 tbsp finely chopped onion 4 tbsp dry sherry
4 tsp salt 4 tsp dried oregano 2 tsp ground cumin
1/4 cup minced fresh ginger root



1 Stir together Seville orange and lime juices. Blend in oil and then garlic, onion, sherry, salt, oregano, cumin and ginger root. Place in a bottle or jar with a tight-fitting lid and refrigerate at least 1 day before using. Keeps about 2 weeks in refrigerator.
