Velvet Lime Ice Cream

INGREDIENTS:
1 cup milk 3/4 cup sugar 2 eggs, beaten
1/2 teaspoon grated lemon peel 1 cup miniature marshmallows 1/2 cup lime juice
1 cup whipping cream 4 or 5 drops green food coloring



1 In a medium saucepan, combine milk, sugar, beaten eggs, and lemon peel. Cook and stir over low heat until mixture is thickened and coats a spoon; remove from heat. stir in marshmallows until melted. Add lime juice, whipping cream, and food coloring until blended. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions.
