Select nice fruit peel. Remove seeds. Roll pastry thin and cut into squares large enough to wrap around tomatoes. Mix together sugar and cream. Place each tomato in middle of pastry square and sprinkle with sugar-cream mixture. Bring corners of pastry square together and wet edges so they will cling together around the fruit. Prick pastry with fork. Place in baking dish and bake 15 minutes in hot (450 F.) oven. Baste with cider. Reduce heat to 350 F., bake 15 additional minutes, then baste again and bake 15 more minutes. Serve with tomato sauce. |
