INGREDIENTS:
4 (4-ounce) Wahoo steaks (or King Mackerel with work) 1 tablespoon Michel Mix 3/4 cup A-1 steak sauce
Michel Mix: 1 medium bulb garlic, all cloves peeled 3 shallots, peeled and cut in half 1 large bunch parsley, washed, with most of the stems removed
1 tablespoon kosher salt 1 tablespoon olive oil



1 Put the fish steaks in a plastic, sealable bag with the Michel Mix and sauce, and let them marinate while you are heating a charcoal or gas grill. When the grill is hot, remove the fish from the bag and grill for several minutes on each side. Nothing else needs to be done. For best results, wait and announce your marinade after you get all the compliments.
2 MICHEL MIX: Using the pulse mode, chop the garlic, shallots, and parsley with the salt with the steel blade of a food processor. You can also mince this finely wtih a good knife. Do not over process. Stir in the olive oil and reserve for use.
