Pork Medallions in Blackjack Sauce

INGREDIENTS:
1 pork tenderloin, cleaned and cut into 2-inch medallions 1/2 cup molasses 1/4 cup Jack Daniel's whiskey
1/4 cup honey 1/2 cup cream



1 Marinate the medallions in a mixture of the molasses, whiskey, and honey. After about 10 minutes, strain the marinade into a small saucepot, add the cream, and bring to a boil over high heat. Reduce until thick. This is a quick version of out Blackjack Sauce. Saute or grill the pork medallions for just a few minutes on each side, or you can bake them at 500 F for about 8 minutes.
