INGREDIENTS:
3 quarts (12 cups) chicken stock 1 medium onion, diced 1 smoked ham hock
2 pounds Fordhook beans or lima beans, fresh or frozen



1 In a large stockpot, bring the stock, onion, and ham hock to a boil over high heat. Add the beans and simmer for 30 to 40 minutes until tender.
