| INGREDIENTS: | ||
| 8 garlic cloves | 2 bay leaves | 2-1/2 tbsp salt |
| 3 quarts water | 1-1/4-1/2 lb yuca, scrubbed, peeled and halved lengthwise, or substute potatoes | vegetable oil for frying |
| 1 | In a saucepan, combine garlic, bay leaves, 2 tbsp salt and water and bring to a boil. Add yuca or potatoes and simmer until tender but not mushy or sticky, 30-40 minutes. |
| 2 | Drain, pat dry with paper towels and, when cool enough to handle, cut into French fries. In a large skillet, heat 1/2-inch of oil to 375 F. Sprinkle yuca fries with remaining salt and fry until golden. Drain fries on paper towels and serve piping hot. |
