Yuca Fries

INGREDIENTS:
8 garlic cloves 2 bay leaves 2-1/2 tbsp salt
3 quarts water 1-1/4-1/2 lb yuca, scrubbed, peeled and halved lengthwise, or substute potatoes vegetable oil for frying



1 In a saucepan, combine garlic, bay leaves, 2 tbsp salt and water and bring to a boil. Add yuca or potatoes and simmer until tender but not mushy or sticky, 30-40 minutes.
2 Drain, pat dry with paper towels and, when cool enough to handle, cut into French fries. In a large skillet, heat 1/2-inch of oil to 375 F. Sprinkle yuca fries with remaining salt and fry until golden. Drain fries on paper towels and serve piping hot.
