Combine meat, onion, tomatoes, water, salt, pepper, chili powder, and bay leaf in a large skillet or saucepan. Cover with tight-fitting lid and simmer 1 to 1-1/4 hours, until meat is just tender. Add mixed vegetables and celery; continue cooking 15 minutes. stir in macaroni and mushrooms. Cover and simmer about 15 minutes longer until macaroni is done. Total time will be 1-1/2 to 1-3/4 hours. If it is necessary to thicken broth, stir into stew 1 tbsp cornstarch mixed with 2 tbsp water. Cook and stir over low heat until broth is clear and thickened. |
