The chiles are washed, seeded and deveined. In a little cooking oil saute the chiles, tomatoes, almonds, raisins and garlic. When ingredients are soft, stir in spices. Cool slightly, then turn mixture into a blender and blend smooth. Run the fried roll and tortilla in blender also, and add to sauce. Pour mixture back into large heavy saucepan. Add enough stock to the mixture so it will cook without sticking. Add salt, sugar and chocolate. Cook over low heat, stirring constantly, until the mixture thickens. Add meat and heat through. |
