Big Cabin Creek Peanut Butter Pancake Stacks

INGREDIENTS:
2 cups pancake mix 2 cups milk 2 eggs
1/2 cup peanut butter 2 tbsp melted shortening or oil butter or margarine
raspberry jam



1 Measure pancake mix, milk, eggs, peanut butter and shortening or oil into bowl. Stir until batter is fairly smooth. Pour batter onto hot, lightly greased griddle, allowing about 1/4-cup batter per pancake. Turn when tops are covered with bubbles and edges look cooked. Turn only once. Spread with butter or margarine and jam, then stack up, allowing 3 pancakes per serving.
