Put oatmeal in a bowl, stir in cup of boiling water, and let mixture stand for 20 minutes. In the bowl of an electirc mixer cream together butter and brown sugar. Beat in eggs, 1 at a time, beating well after each addition. Gradually blend 1 cup flour and the spices and baking soda. Beat in the oatmeal mixture and fold in 1 cup each of raisins and chopped walnuts, add citron if desired. Pour batter in buttered 9-in square cake pan and bake in a preheated moderate oven (350 F.) for 45 to 50 minutes, or until a cake tester inserted in center comes out clean. Transfer the cake to a rack and let it cool. Dust the top with sifted powdered sugar or use a favorite icing. |
