| INGREDIENTS: | ||
| 12 chicken wings or chicken wing drumettes | salt and fresh-ground black pepper to taste | 2 tbsp creamy peanut butter |
| 2 tbsp soy sauce | 1-1/2 tbsp honey | 1/2 tsp ground cumin |
| 1 clove garlic, minced | 1/4-1/2 tsp dried hot red pepper flakes to taste, or 1/2 fresh or canned jalapeno pepper, seeded and finely minced | 1/3 cup finely chopped salted or unsalted roasted peanuts |
| 1/4 cup finely chopped fresh cilantro | ||
| 1 | Preheat oven to 400 F. In a shallow baking pan lined with foil, season chicken wings or drumettes with salt and pepper. Bake in middle of oven for 30 minutes, or until they begin to turn brown and become crips. |
| 2 | While chicken wings are baking, in a small saucepan, stir together peanut butter, soy sauce, honey, cumin, garlic and pepper flakes. Cook over low heat, stirring until smooth. Brush chicken wings generously with sauce and bake them for 10-15 more minutes. Sprinkle chicken wings immediately with chopped peanuts and cilantro and let them cool slightly before serving. |
