INGREDIENTS:
3 seedless cucumbers, peeled and chopped 3 cloves garlic, minced 3 cups chicken stock
2 tbsp mild vinegar or lime juice 2 cups buttermilk 1/4 cup chopped scallions
1/4 cup chopped fresh dill chive flowers for garnish (optional)



1 In a large bowl, combine cucumbers, garlic, stock, vinegar or lime juice, buttermilk, scallions and dill. Cover and chill in the refrigerator overnight to allow flavors to mellow.
2 Stir the soup thoroughly and garnish with chive flowers before serving.
